Ingredients
- 20 leaves of red or green lettuce
- 2 cups cooked steamed rice
- 1 block firm tofu
- 1 carrot
- 1/2 cucumber
Dipping & Dressing:
- 1/2 cup soy sauce
- 1 tbsp sesame oil
- 1 tbsp vinegar
- 1 clove garlic, minced
- 1 tsp toasted sesame seeds
Instructions
1. Wash and dry the lettuce leaves. Cut off the hard ends.
2. Slice the tofu into sticks like french fries (try to get 20 sticks out of the block). Saute in oil on all sides until light golden.
3. Season with salt and sprinkle with toasted sesame seeds. Set aside.
4. Repeat with carrot sticks, but slice them much thinner. If they start to stick, add a bit of water to the pan. This also helps soften and sweeten them. Season as with the tofu.
5. Next, cut the cucumber into thin "french fries".
6. Combine all the dressing ingredients.
Begin your roll assembly:
1. Place one lettuce leaf open on your surface. Spoon 1 Tbsp rice in the centre. Place 1 tofu stick, some carrot and some cucumber on top. Drizzle with 1 tsp dressing.
2. Fold the lettuce leaf from the top down, then fold in the sides and place seam-side-down on a serving plate.
3. Repeat until all your ingredients are used up. Place the remaining dressing in a serving bowl to dip the rolls into.
Serve with miso soup.
