SWEET FIG BREAD

This recipe is made using homegrown figs but of course store-bought will do too. It is a sweet bread that can be made vegan or non and goes well with white wine.

  • 2 eggs (or egg replacer equivalent)
  • 1 1/3 cups sugar
  • 2 cups ripe figs, mashed
  • 1/2 cup oil
  • 1 1/3 cups all purpose flour
  • 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (or pumpkin pie spices)
  • 1/2 tsp cardamom
  • 1/2 cup buttermilk (can substitute with soy milk and 2 tablespoons lemon juice)
  • 1 cup chopped pecans (can be omitted)

Beat eggs well. Add the mashed figs and vegetable oil.

Sift together dry ingredients.

Add the fig mixture alternately with the buttermilk. Beat well. Fold in chopped pecans.

Bake on 350 for approximately 50 minutes, but will depend on bread pan size and oven.
