Cooking with Plants

Ingredients

  • 1 avocado, peeled and mashed (reserve pit)
  • 1 can chickpeas (around 1 & 1/2 cups)
  • 2 cloves garlic, peeled and mashed
  • 3 Tbsp tahini
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Salt (to taste)

Instructions

1. Blend all the ingredients together in a food processor until smooth, or mash with all your might by hand.

2. Put into a container, including the pit (helps keep it fresh).

3. Chill and serve.

Salsa Hummus variation: combine 1 or 2 chopped green onions, 1/4 cup minced cilantro, olive oil, salt and a splash of lemon juice. Stir most of it into the avocado hummus. Spoon into a serving dish and garnish with the remaining salsa mixture.
