Just found this interesting article on the Utne site about canning jars. All of the major North American brands that manufacture metal canning lids, are coating the tops in BPA (Bisphenol A).

The good news is that our food rarely touch the tops as jars are stored upright. But it still begs the question, why do all of this work only to introduce another contaminant into our food?

Obviously jars like Weck are safe. But who can afford them for all canning needs?
