Prickly Pear (Opuntia megacantha)
I found this plant growing on the beach along the Pacific Coast, but they were seen growing virtually everywhere on my trip. They bear a spiny, edible, pear-shaped fruit called "tuna" (spanish), that is really delicious. It can be made into a drink, eaten as is, or made into an icy treat called "nieve". Once boiled, the paddles or pads called "nopales" or "nopalitos", can also be eaten and have a taste similar to green beans.
