On this trip I was surprised to learn that the fruit isn't the only part of the avocado or aguacate (Perseus Americana) that can be used for culinary purposes. The leaves are used as an herb for flavouring and have a taste reminicent of anise or bay. They are first toasted on a grill or stone "comal" and then ground and added to soups or sauces.
