Dandelion Hortopita — It’s Really Good!

Davin and I went on a dandelion picking mission at the community garden the other day, harvesting what we thought was enough to make the dandelion Hortopita recipe. As we picked, I repeatedly muttered that I didn’t think we had enough. I went to the garden without reviewing the recipe for amounts but I was certain that whatever we picked would boil down to a smallish blob. It turns out that this 9″ wide bowl holds what does not come even close to 2 lbs of dandelion greens. In fact, what you see here is more like just over half a pound.

Lacking the correct amount of greens called for slashing the size of the finished Hortopita significantly and reducing the ingredients accordingly. I don’t think I have ever in my life followed a recipe exactly as written so not one to be deterred we marched ahead rather than waiting another day until we could go collect more. It still came off famously! I have never before boiled dandelion greens. They smelled surprisingly like spinach while boiling and completely lost their bitterness in the process. They were so delicious on their own as a boiled green that I plan to continue harvesting them with vigor for what remains of the growing season and eating them as-is with a dash of salt and sprinkle of oil.

The Hortopita itself was light and crispy on the outside, salty and fresh on the inside. In the future I will try adding eggs for protein and supplementing with other greens or veggies as I don’t expect to harvest enough dandelion leaves at any one time to make the full-sized pie.

Thanksgiving Inspiration

Well it took a couple of weeks, but I think I have finally accepted Fall. Once the windows were closed, the houseplants brought indoors, and the knitting projects pulled out there was no turning back. Monday is Thanksgiving here in Canada. We are a non-traditional household who generally ignore most holidays, but we like Thanksgiving as a way to celebrate the harvest (the garden was good to us this year) and an excuse to stuff ourselves with food.

Inspiring Thanksgiving Ideas:

  • Maple Leaf Roses – Link via the forums. A distinctly Fall way to make a centrepiece.
  • Pumpkin Pie – We’ve got the pumpkin so it’s all systems go. I know I pump this one a lot but I’m proud of it and we enjoy it whenever pumpkins are available.
  • Apple / Pear Pie – Another pie I have developed. I still have to write the actual directions down but the trick to it is that I first make apple sauce (sometimes adding pears too) and then spoon it on top of the apple and pear slices in the pie before putting the top on. It makes a moister pie that allows for less sweetner. We use maple syrup.
  • Yam Butter
  • Roasted Pear and Fennel Salad
  • Baked Lemon Basil Chicken – I am just about to harvest my remaining lemon basil.
  • Dandelion Hortopita – This is on our list for Monday’s meal. I’ll be going over to the garden this weekend to harvest a bunch.
  • Drying Gourds. We made these mini pumpkin lights for the table a number of years ago. Davin made them by cutting ridges into the sides with lino carving tools and using a drill to make little dots.
  • Gourds, Just Sitting There – I like these wee gourds on Wee Wonderfuls. Just sitting there. So pretty. I currently have a pumpkin and two acorn squash (one green and one variegated) sitting on my special hutch in the kitchen waiting to be cooked but in the meantime they are just sitting there. Looking pretty.

Fall Arrangement

  • Here are more Fall-like things sitting and looking pretty. Together. Except the peppers which are still growing. The flat pumpkin is a Long Island Cheese Squash. I think they’re gorgeous and could sit and stare at one for hours, but they also happen to make a great pie.

  • This is a Hubbard Squash that I carved out and planted up with lemongrass and pansies. Everything is edible!

Saving Tomato Seeds

It’s mid September and sadly most of the container-grown tomato plants on my rooftop are on their last lap. A few green stragglers remain and the vines are starting to yellow and fade. Thankfully I’ve got another crop still running over at my community garden plot where the plants aren’t subjected to the intense sun and heat that causes the roof plants to hit such an accelerated pace. When the plants were producing at full stride, I was so caught up in enjoying (and photographing) the harvest I completely forgot to save some seeds for next year’s crop.

Of course, it’s not too late. I’ve outlined my process for seed-saving tomato seeds below. The process with very wet fruit like tomatoes is a bit different than with a relatively dry fruit like peppers. While peppers are as simple as scooping out the seeds and setting them to dry, tomatoes call for a slightly more complex method. You can, in theory use the pepper method with tomatoes. However, you may have noticed that tomatoes have a gelatinous layer surrounding each seed. This layer is called a germination inhibitor and is made up of a chemical that prevents the tomato seeds from germinating inside the fruit. While the scoop and dry method will remove that layer, fermenting the seeds first will also serve to kill diseases your plant may have contracted along the way.

Fermenting Tomato Seeds

1. Choose a heathly tomato from a healthy plant – While you’d rather save the best-looking tomatoes for eating, sick fruit from sick plants pass on… well, sickness. And remember, you can always scoop out the seeds for saving and eat the rest.

2. Scoop the insides out of your tomato (seeds and all) into a plastic yoghurt container. A lid isn’t critical but it helps with the smell.

3. Label your container with the variety name and set it somwhere warm but out of direct sun. You can prop the lid on but don’t seal it shut. Remember you’re fermenting here so this is going to stink. Find an out-of-the-way spot if you can.

4. Stir your container once or twice a day until a “nice” layer of white mold forms on top. This usually takes a few days. Don’t leave the fermented goo sitting for too long after this stage or your seeds will start to germinate in the container.

5. Your seeds are now ready to harvest. Thankfully you do not have to dig around in this mess in order to fish them out. All of the good seeds will have sunk to the bottom with all the useless stuff left floating in the mold. Separating the good from the bad is as easy as scooping or pouring off the moldy layer from the liquid. Remove as much as you can without losing any of the good seeds.

6. Fill the container with water, stir, and repeat step five. Repeat refilling with water and scooping until all the bad debris has been removed.

7. Rinse off the remaining seeds in a strainer and spread them out onto a pad of newspaper.

8. Set the seeds out to dry for a few days. Don’t forget to label them if you’ve got more than one variety on the go. Take it from me. I always think I’ll remember what I’ve got but I NEVER do.

9. Package your dried seeds, label, and store for next year.

Easy Peasy Birdbath

Now that the veggies are producing quite happily, I have a few weeks of down time before I start the cooler weather veggies. So my attention has turned to the birds. Birds are great to have around, they eat some grubby little insects I would rather just not deal with. They also emit a certain peacefulness and are an archetype for freedom. Simply put, I gather great joy in watching birds play and interact with my plants. Nothing brings out the kid in me like finding a nest of hatchlings, either.

There are several ways to attract birds. I have the feeding and housing down; but water features require a little more upkeep if one doesn’t wish to become a breeder of mosquitoes. Birdbaths offer a manageable amount of water, which is either used or evaporated rather quickly, evading the little blood sucking insects. Birdbaths are available in every price range, and with an even greater variety of design. However, with my eclectic yard, not just any birdbath will do. I was looking for a birdbath for a kitchen themed garden bed.
If you have less clutterbug tendencies than I, this project is a good excuse for an excursion to the hardware and thrift stores. I scoured my closet and garage through the piles of mess I collect and rationalize keeping by saying I’ll use it one day (I will use it one day) all in the name of art. I found 3 pieces of rebar and the basin from a wash pitcher/basin set. Really 3 or 4 of any hefty pole/stick will work . . . use your imagination: broken tool handles, steel pipe, logs stacked to resemble something of 3 dimensional Constructivist art. I used rebar, which is solid and cheap. For a standard height birdbath similar to my design, you will need 3 4-foot pieces. As for the actual bath part, anything with depth enough to hold an enticing amount water will work. Look at the water reservoir upside down, a flat band around the edge will be a beneficial design element that will give the rebar something to hold, providing it shifts on itsstand. Just remember the birds generally won’t pay attention to the materials, they just appreciate a community pool.

So, here goes: hammer the rebar into the ground about a foot deep. Test it when you think you have it deep enough, checking for stability. You want to form something of an equilateral triangle, and the deeper the bowl, the more you need to make sure the triangle sides truly are equal in length. A too-long side will allow the bowl to tip off the stand, putting quite a strain on a very surprised little bird’s heart. Balance the bowl on top. With last year’s model, I didn’t use anything to adhere the bath to the stand and it stayed up all summer. If more stability is desired, a glue like E-6000 will do the job, dab it on the top of your rebar, place the bowl in place and in less than 2 minutes it will be set enough for use. I would also be willing to speculate hot glue would work, but running an extension cord out into the yard to heat up hot glue might be a little embarrassing. Then all you have left to do is add clean cool water!

Plastic Bag Tote (Marlo Cairns)

This crocheted bag looks like a great project to make for toting your garden harvest or trips to the Farmer’s Market. It’s made using plastic grocery bags cut into workable “yarn” strips. I like that the designer used different coloured bags to create a classier looking bag.
